- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of your slow cooker.
- In a separate bowl, mix the rice, black beans, corn, diced tomatoes with green chilies, taco seasoning, and chicken broth. Stir until well combined.
- Pour the mixture over the chicken in the slow cooker and season with salt and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and the rice is tender.
- Once done, use two forks to shred the chicken directly in the slow cooker. Stir everything together.
- Sprinkle the shredded cheddar cheese on top, cover, and let it sit for an additional 10 minutes until the cheese melts.
- Garnish with fresh cilantro before serving.
