  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the white beans, vegetable broth, smoked paprika, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Lower the heat and simmer for 20 minutes to allow the flavors to blend.
  5. Use an immersion blender to puree the soup until smooth, or leave it chunky if you like a rustic texture.
  6. Stir in the kale and cook for 5 minutes, until tender.
