  • 1 medium spaghetti squash
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut spaghetti squash in half lengthwise, remove seeds, and place cut-side down on a baking sheet. Roast for 30–40 minutes, or until tender.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic for 2–3 minutes until fragrant.
  4. Add ground turkey, breaking it apart as it cooks, and brown for 5–7 minutes.
  5. Stir in chopped bell pepper, diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
  6. Once squash is done, scrape the flesh into spaghetti-like strands using a fork. Add to the turkey mixture and toss to combine.
  7. Transfer the mixture to a greased 9×13-inch baking dish. Top with mozzarella and Parmesan.
  8. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  9. Garnish with fresh basil before serving.

Notes

This casserole can be made ahead and refrigerated for up to 2 days before baking. You can also use ground chicken or lean beef as an alternative to turkey. For a spicier flavor, add a pinch of red pepper flakes to the skillet.
