Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden, being careful not to burn it.
  3. Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring frequently, until the spinach is wilted. If using, add the red pepper flakes for a touch of heat.
  4. Toss the drained spaghetti into the skillet with the garlic and spinach. Add a splash of the reserved pasta water to help create a light sauce. Season with salt and pepper to taste, and toss everything together until well combined.
  5. Serve immediately, topped with freshly grated Parmesan cheese and a squeeze of lemon juice for brightness.
