Ingredients
- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, and Parmesan cheese. Mix well until all ingredients are evenly incorporated.
- In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Pour this mixture into the spinach and cheese mixture, stirring until fully combined.
- Grease a 9×13 inch baking dish with olive oil. Pour the spinach and cheese mixture into the dish, spreading it evenly.
- In a small bowl, combine the breadcrumbs and red pepper flakes (if using). Sprinkle the breadcrumb mixture evenly over the top of the casserole.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set in the center.
Notes
For best results, make sure to thoroughly drain any excess moisture from the spinach before mixing. You can substitute frozen spinach (thawed and drained) if fresh isn’t available. The casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking.
