  • 3 cloves garlic, minced

  • 1 cup fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, grill or pan-sear the chicken breasts if not already cooked, then slice them into strips or bite-size pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes, until fragrant but not browned.
  4. Pour in the diced tomatoes with their juices. Bring to a gentle simmer and cook for about 5 minutes, allowing the flavors to meld and the sauce to reduce slightly.
  5. Stir in the chopped spinach and cook for 2–3 minutes, until wilted and vibrant green.
  6. Reduce the heat to low. Add the heavy cream and grated Parmesan cheese, stirring until the cheese melts and the sauce becomes smooth and creamy. Season with salt and pepper to taste.
  7. Add the cooked pasta and sliced grilled chicken to the skillet. Toss well to coat everything evenly in the creamy tomato spinach sauce.
  8. Cook for 1–2 more minutes on low heat, just until everything is heated through.
  9. Serve hot, garnished with fresh basil and extra Parmesan if desired.
