Ingredients
Scale
- 8 oz spaghetti
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 4 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil, for garnish
- Grated Parmesan cheese, for serving
Instructions
- Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Season with salt, pepper, and red pepper flakes if using.
- Stir in the cherry tomatoes and cook for an additional 2-3 minutes, allowing them to soften. Add the fresh spinach and cook until wilted.
- Combine the cooked spaghetti with the shrimp and tomato mixture in the skillet. If the pasta seems dry, add a little of the reserved pasta water to achieve the desired consistency. Toss everything together to combine.
- Serve immediately, garnished with fresh basil and grated Parmesan cheese.
Notes
- Use whole wheat pasta or gluten-free spaghetti for a healthier twist.
- Add a squeeze of lemon juice for extra brightness.
- Substitute kale or arugula if you don’t have spinach.
- For extra creaminess, mix in a bit of heavy cream or cream cheese before serving.
