			- 1 pound ground turkey
 - 2 cups fresh spinach, chopped
 - 8 ounces mushrooms, sliced
 - 1 tablespoon olive oil
 - 1 onion, chopped
 - 2 cloves garlic, minced
 - 1 teaspoon dried oregano
 - 1 teaspoon paprika
 - Salt and pepper to taste
 - 1/4 cup grated Parmesan cheese (optional)
 
Instructions
- Heat olive oil in a large skillet over medium heat.
 - Add the chopped onion and minced garlic, sauté for 2-3 minutes until softened.
 - Stir in the ground turkey, breaking it apart with a spatula. Cook 5-7 minutes, or until browned and cooked through.
 - Mix in the sliced mushrooms, oregano, paprika, salt, and pepper. Cook for another 5 minutes, until mushrooms are tender.
 - Add the spinach and cook 2-3 minutes until wilted.
 - Sprinkle with Parmesan cheese before serving, if desired.
 
Notes
- For extra richness, stir in a splash of cream at the end.
 - Swap in kale or Swiss chard for the spinach if you prefer heartier greens.
