  • 2 cups fresh spinach, chopped
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sauté for 2-3 minutes until softened.
  3. Stir in the ground turkey, breaking it apart with a spatula. Cook 5-7 minutes, or until browned and cooked through.
  4. Mix in the sliced mushrooms, oregano, paprika, salt, and pepper. Cook for another 5 minutes, until mushrooms are tender.
  5. Add the spinach and cook 2-3 minutes until wilted.
  6. Sprinkle with Parmesan cheese before serving, if desired.
