- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup ricotta cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
- Olive oil, for frying
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let them rest for 10–15 minutes to draw out moisture. Squeeze out as much liquid as possible.
- In a large bowl, mix the zucchini, ricotta, flour, eggs, Parmesan, parsley, garlic, and pepper until fully combined.
- Heat a layer of olive oil in a skillet over medium heat. Drop heaping spoonfuls of the batter into the pan and flatten slightly.
- Fry for 3–4 minutes on each side until golden and crisp.
- Remove and drain on paper towels. Serve warm, with sour cream or extra herbs if you like.
Notes
- If the batter seems too wet, stir in a tablespoon of extra flour.
- For added flavor, try a sprinkle of lemon zest or a pinch of red pepper flakes.
