Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for 2–3 minutes, until the onion is softened and translucent.
  3. Add the ground beef, breaking it apart with a spatula. Cook for 5–7 minutes, until browned and cooked through. Drain excess fat if necessary.
  4. Stir in the diced potatoes, beef broth, paprika, dried oregano, salt, and pepper. Mix well to combine.
  5. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 15–20 minutes, stirring occasionally, until the potatoes are tender and most of the liquid is absorbed.
  6. Once the potatoes are cooked, taste and adjust seasoning with additional salt and pepper, if needed.
  7. Sprinkle the shredded cheddar cheese evenly over the top of the beef and potatoes. Cover the skillet again and cook for 3–5 minutes, until the cheese is melted and bubbly.
  8. Remove from heat, garnish with freshly chopped parsley, and serve hot straight from the skillet.
