Description
This Cheesy Hash-Brown Casserole is comfort food at its coziest creamy, cheesy, and irresistibly golden on top. Frozen hash browns are transformed into a rich, oven-baked delight with sour cream, cheddar, and a velvety cream of chicken base. It’s the perfect make-ahead side for brunches, holidays, potlucks, or any time you’re craving a warm, crowd-pleasing dish.
Ingredients
Scale
- 2 pounds frozen hash browns
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup onion, finely chopped
- 1/4 cup butter, melted
- Salt and pepper, to taste
- 1 cup corn flakes (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- In a large mixing bowl, combine the frozen hash browns, sour cream, cream of chicken soup, shredded cheddar cheese, finely chopped onion, melted butter, salt, and pepper.
- Stir until everything is evenly coated and the mixture is well combined, breaking up any large clumps of hash browns.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- If using, sprinkle the corn flakes evenly over the top of the casserole for a crunchy finish.
- Bake for 45–50 minutes, or until the casserole is hot and bubbly around the edges and the top is golden brown.
- Remove from the oven and let rest for 5–10 minutes before serving to allow the casserole to set slightly.
Notes
- You can use either shredded or diced-style frozen hash browns; no need to thaw them before mixing.
- Adjust the salt carefully since the cream of chicken soup and cheese already contain sodium.
- Letting the casserole rest after baking helps it firm up slightly, making it easier to cut and serve neat portions.
- For extra cheesiness, increase the cheddar to 1 1/2 cups or sprinkle an additional 1/2 cup on top during the last 10 minutes of baking.
- If the top is browning too quickly, tent the casserole loosely with foil for the last 10–15 minutes of baking.
