- 1/2 cup milk (plus 3/4 cup for the biscuit dough, divided)

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup shredded cheddar cheese
- Nonstick cooking spray or butter for greasing the baking dish
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, chicken broth, 1/2 cup milk, melted butter, garlic powder, onion powder, dried thyme, salt, and pepper. Stir until everything is evenly coated and well mixed.
- Pour the chicken mixture into the prepared baking dish, spreading it out into an even layer.
- In a separate bowl, whisk together the flour, baking powder, and 1/4 teaspoon salt until well combined.
- Stir in the shredded cheddar cheese so it’s evenly distributed throughout the flour mixture.
- Gradually add the remaining 3/4 cup milk to the dry ingredients, stirring just until a soft, thick biscuit dough forms. Do not overmix.
- Using a spoon or small scoop, drop spoonfuls of the biscuit dough over the chicken mixture, spacing them close together to mostly cover the surface.
- Place the dish in the preheated oven and bake for 25–30 minutes, or until the biscuit topping is puffed, golden brown, and cooked through, and the filling is bubbling around the edges.
- Remove from the oven and let the cobbler rest for 5–10 minutes before serving to allow the filling to thicken slightly.
- Spoon into bowls and serve warm.

- Use rotisserie chicken or leftover roast chicken to cut down on prep time.
