Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté for about 5 minutes, or until the vegetables are softened.
  2. Stir in the minced garlic, dried thyme, and dried oregano. Cook for 1 minute, stirring constantly, until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil over medium-high heat.
  4. Once boiling, add the shredded chicken and orzo pasta. Reduce the heat to a gentle simmer and cook for 10–12 minutes, stirring occasionally, until the orzo is tender.
  5. Stir in the chopped spinach and cook for another 2–3 minutes, just until wilted and bright green.
  6. Season the soup with salt, pepper, and the juice of 1 lemon (or to taste), adjusting the seasoning as needed.
