  • For the Garlic Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 3 cloves garlic, minced
  • Juice of 1/2 lemon
  • Salt, to taste

Instructions

  1. In a large mixing bowl, combine the olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, minced garlic, lemon juice, salt, and pepper. Stir until a smooth, fragrant marinade forms.
  2. Add the chicken thighs to the bowl and toss well to coat each piece thoroughly in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.
  3. When ready to cook, preheat your grill, grill pan, or a large skillet over medium-high heat. Lightly oil the grates or pan if needed.
  4. Remove the chicken from the marinade, letting excess drip off. Cook the chicken thighs for 6–7 minutes per side, or until nicely charred on the outside and the internal temperature reaches 165°F (75°C).
  5. Transfer the cooked chicken to a plate and let it rest for 5 minutes to keep it juicy, then slice into thin strips or small pieces.
  6. While the chicken rests, prepare the garlic sauce. In a small bowl, whisk together the mayonnaise, plain yogurt, minced garlic, lemon juice, and a pinch of salt until smooth and creamy. Adjust seasoning to taste.
  7. Warm the pita bread briefly on the grill or in a dry skillet until soft and pliable.
