Description

This Cranberry Walnut Coleslaw is a bright, festive twist on classic slaw crisp cabbage and carrots tossed with sweet-tart dried cranberries, crunchy walnuts, and a creamy honey-apple cider dressing.   • 4 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, and grated carrots.
  2. Add the chopped walnuts and dried cranberries to the bowl. Toss well to evenly distribute the mix-ins.
  3. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until completely smooth and creamy.
  4. Pour the dressing over the cabbage mixture.
  5. Toss until all of the cabbage, carrots, cranberries, and walnuts are evenly coated with the dressing.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the cabbage to slightly soften.
  7. Before serving, stir the coleslaw, taste, and adjust seasoning with additional salt and pepper if needed. Serve chilled.

Notes

  • For the best texture, shred the cabbage finely so it absorbs the dressing without becoming soggy.
  • Adjust the sweetness by adding more or less honey to suit your taste or the tartness of your cranberries.
  • This slaw tastes even better after a few hours in the fridge, making it perfect for prepping ahead.
  • If your dried cranberries are very sweet, you may want to reduce the honey slightly.
