- 4 boneless, skinless chicken breasts
- 8 ounces cream cheese, softened
- 1 cup chicken broth
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the seasoned chicken breasts and sear for 4–5 minutes per side, or until golden brown. Transfer the chicken to a plate and set aside.
- In the same skillet, add the sliced mushrooms. Sauté for 3–4 minutes, stirring occasionally, until they release their moisture and become tender and lightly browned.
- Add the chopped spinach to the skillet. Cook for about 2 minutes, stirring, until wilted and well combined with the mushrooms. Remove from heat while you prepare the sauce.
- In a mixing bowl, combine the softened cream cheese and chicken broth. Whisk or stir until smooth and creamy; a few small lumps are okay as they will melt in the oven.
- Nestle the seared chicken breasts back into the skillet over the mushroom and spinach mixture. Pour the cream cheese mixture evenly over the chicken, making sure each piece is well coated with sauce.
- Transfer the skillet to the preheated oven and bake for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Carefully remove the skillet from the oven and let the chicken rest for 5 minutes. The sauce will thicken slightly as it cools.
- Garnish with freshly chopped parsley before serving, spooning plenty of the creamy sauce over each piece of chicken.
Notes
- Softened cream cheese mixes more easily with broth take it out of the fridge 20–30 minutes before cooking.
- If your sauce looks slightly lumpy before baking, don’t worry; it will smooth out as it heats in the oven.
- You can lightly oil or spray the skillet before searing if your pan tends to stick, but the olive oil in the recipe is usually enough.
