  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese
  • 1/2 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Nonstick cooking spray or butter, for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick spray or butter.
  2. In a large mixing bowl, combine the shredded chicken, uncooked white rice, chicken broth, cream of chicken soup, sour cream, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper.
  3. Stir until everything is evenly combined and the rice is well distributed throughout the mixture.
  4. Pour the mixture into the prepared baking dish and spread it into an even layer, making sure the liquid covers the rice as much as possible.
  5. Cover the dish tightly with aluminum foil to trap in steam, which helps cook the rice evenly.
  6. Bake for 45 minutes, then carefully remove the foil. Stir gently to check that the rice is softening; smooth the top back out.
  7. Sprinkle the shredded cheddar cheese evenly over the top of the casserole, followed by the French fried onions.
  8. Return the dish to the oven, uncovered, and bake for an additional 15–20 minutes, or until the cheese is melted and bubbly, the onions are golden and crisp, and the casserole is hot and the rice is tender.
  9. Remove from the oven and let the casserole rest for 5–10 minutes before serving to allow it to set slightly.
