- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 sleeve Ritz crackers, crushed
- 2 tablespoons butter, melted
- Fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in the bottom of the crockpot in a single layer.
- In a mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Whisk or stir until smooth and well combined.
- Pour the creamy mixture evenly over the chicken in the crockpot, making sure the chicken is fully coated.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and very tender.
- Once the chicken is cooked, use two forks to shred the chicken directly in the crockpot. Stir well so the chicken is fully coated in the creamy sauce.
- In a separate bowl, combine the crushed Ritz crackers and melted butter. Stir until all the crumbs are evenly coated and look sandy and moist.
- Sprinkle the buttery cracker mixture evenly over the top of the chicken and sauce in the crockpot.
- Cover and cook on HIGH for an additional 20–30 minutes, or until the cracker topping is heated through and lightly crisp on top.
- Turn off the crockpot and let the casserole sit for 5–10 minutes to set slightly.
- Garnish with freshly chopped parsley before serving.

- If your crockpot runs hot, start checking for doneness at the lower end of the cooking time range.
