Description

  • 1 onion, chopped

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Pat the beef chuck roast dry with paper towels, then season generously with salt and pepper on all sides.
  3. Sear the roast in the hot skillet for 3–4 minutes per side, until deeply browned. This step builds flavor in the final dish.
  4. Transfer the seared roast to the crockpot, placing it in the center of the insert.
  5. Scatter the chopped onion, minced garlic, carrots, and potatoes around and on top of the roast.
  6. In a separate bowl, whisk together the beef broth, Worcestershire sauce, dried thyme, and dried rosemary until combined.
  7. Pour the broth mixture evenly over the roast and vegetables in the crockpot.
  8. Cover and cook on LOW for 8–10 hours or on HIGH for 4–5 hours, until the beef is very tender and easily shreds with a fork.
  9. Carefully remove the roast and vegetables from the crockpot and transfer to a serving platter.
  10. Let the roast rest for 5–10 minutes, then slice or shred as desired.
