- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups tortilla chips, lightly crushed
- 2 cups shredded cheese (cheddar or Mexican blend)
- Sour cream, for serving (optional)
- Chopped cilantro, for serving (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef or turkey with the chopped onion and minced garlic, breaking up the meat as it cooks, until no longer pink and the onions are softened, about 5–7 minutes.
- Drain any excess fat from the skillet, then transfer the cooked meat mixture to the crockpot.
- Add the black beans, corn, diced tomatoes with green chilies (undrained), taco seasoning, and salsa to the crockpot. Stir well to combine everything evenly.
- Spread half of the crushed tortilla chips over the meat mixture in the crockpot. Sprinkle half of the shredded cheese evenly over the chips.
- Repeat the layers with the remaining crushed tortilla chips and the remaining shredded cheese.
- Cover the crockpot with the lid and cook on LOW for 4–6 hours or on HIGH for 2–3 hours, until hot throughout and the cheese is melted and bubbly.
- Scoop the casserole into bowls or onto plates and serve hot, topped with sour cream and chopped cilantro if desired.
Notes
- You can use either ground beef or turkey pick your favorite or what you have on hand.
- For a thicker, more casserole-like texture, let the cooked casserole sit with the lid off for 10–15 minutes before serving.
