  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced bell peppers (any color)
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking dish if desired.
  2. Place the chicken breasts in the center of the baking dish in a single layer.
  3. Scatter the broccoli florets, halved cherry tomatoes, and sliced bell peppers around the chicken, distributing them evenly.
  4. In a small bowl, whisk together the low-sodium chicken broth, olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.
  5. Pour the seasoned broth mixture evenly over the chicken and vegetables, making sure everything is lightly coated.
  6. Cover the baking dish tightly with aluminum foil and bake for 25 minutes.
  7. Remove the foil and return the dish to the oven. Bake for an additional 15–20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the vegetables are tender.
  8. If desired, broil on high for 2–3 minutes at the end for extra color on the chicken and vegetables.
  9. Remove from the oven and let the chicken rest for 5 minutes to retain its juices.
  10. Garnish with freshly chopped parsley, if using, and serve warm straight from the pan.

Notes

  • For extra flavor, marinate the chicken directly in the broth mixture for 30 minutes before baking.
  • If your chicken breasts are very thick, butterfly them or pound slightly so they cook more evenly.
  • Vegetables will be quite tender with the full cook time; reduce by 5 minutes for crisper veggies.
