Description
This French Onion Ground Beef Rice Casserole layers all the cozy flavors of classic French onion soup into a hearty, family-friendly bake. Tender rice, savory ground beef, caramelized onions, and creamy mushroom sauce all melt together under a blanket of Swiss cheese for a one-pan dinner that feels special but stays weeknight easy.
Ingredients
Scale
- 1 pound ground beef
- 1 cup long-grain white rice, uncooked
- 2 cups beef broth
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup shredded Swiss cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onion and cook, stirring occasionally, for 10–12 minutes, or until deeply golden and caramelized.
- Add the ground beef to the skillet with the onions. Cook, breaking it apart with a spatula, for 5–7 minutes or until browned and cooked through. Drain off any excess fat.
- Season the beef and onion mixture with the garlic powder, onion powder, salt, and pepper. Stir well to combine and remove from the heat.
- In a large mixing bowl, combine the uncooked long-grain white rice, beef broth, cream of mushroom soup, and the cooked beef-onion mixture. Stir until everything is evenly incorporated.
- Pour the mixture into the prepared 9×13-inch baking dish and spread it into an even layer. Sprinkle the shredded Swiss cheese evenly over the top.
- Cover the dish tightly with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10–15 minutes, or until the rice is tender, most of the liquid is absorbed, and the cheese is melted and bubbly.
- Let the casserole rest for 5–10 minutes before serving. Garnish with chopped fresh parsley and scoop into bowls or onto plates.
Notes
- Caramelizing the onions slowly is key to building that deep French onion flavor—don’t rush this step.
- If your oven runs hot, check the casserole a few minutes early to be sure the rice doesn’t overcook or dry out.
- This casserole thickens as it rests, so letting it sit for at least 5–10 minutes makes it easier to scoop and serve.
