This Garlic Herb Chicken & Veggie Sheet Pan Dinner is a weeknight hero: juicy chicken breasts coated in a zesty garlic-herb marinade, roasted alongside vibrant veggies until everything is tender, caramelized, and deeply flavorful.   • 2 cups broccoli florets
  • 2 cups baby carrots
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large sheet pan or line it with parchment paper for easier cleanup.
  2. In a large bowl, whisk together the olive oil, minced garlic, dried Italian herbs, salt, and pepper until well combined and fragrant.
  3. Add the chicken breasts to the bowl and turn to coat thoroughly in the garlic-herb mixture. Let marinate for about 15 minutes to build flavor.
  4. Arrange the marinated chicken breasts in the center of the prepared sheet pan in a single layer.
  5. Add the broccoli florets, baby carrots, and sliced bell peppers around the chicken on the pan. Drizzle any remaining garlic-herb mixture over the vegetables and toss lightly to coat.
  6. Roast in the preheated oven for 25–30 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F / 75°C) and the vegetables are tender with lightly browned edges.
