Description

For the Cinnamon-Sugar Layers

  • ⅓ cup packed light brown sugar (67 g)
  • 1½ teaspoons ground cinnamon

For the Apples

  • 2 medium apples, peeled, cored, and finely diced, about 2 cups or 250 g prepared
  • 2 tablespoons granulated sugar (25 g)
  • 1 teaspoon ground cinnamon

For the Bread

  • 1½ cups all-purpose flour (190 g)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened (113 g)
  • ⅔ cup granulated sugar (133 g)
  • 2 large eggs, at room temperature
  • 1½ teaspoons vanilla extract
  • ½ cup milk, at room temperature (120 ml)

For the Vanilla Glaze

  • ¾ cup powdered sugar (90 g)
  • 12 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Prepare the pan and fillings.
    Preheat the oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving enough overhang on the sides to lift the loaf out easily. In a small bowl, combine the brown sugar and cinnamon. In a separate bowl, toss the finely diced apples with the granulated sugar and cinnamon until evenly coated.
  • Prepare the batter.
    In a medium bowl, whisk together the flour, baking powder, and salt. In a large mixing bowl, beat the softened butter and granulated sugar for about 3–4 minutes, until pale, light, and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Finish mixing the batter.
    With the mixer on low speed, add the flour mixture in three additions, alternating with the milk in two additions. Begin and finish with the dry ingredients. Mix only until everything is combined, being careful not to overmix.
  • Layer the loaf.
    Spread half of the batter evenly into the prepared loaf pan. Scatter half of the cinnamon-coated apples over the batter, leaving behind any excess liquid collected in the bowl. Sprinkle with half of the brown sugar-cinnamon mixture.
  • Add the remaining layers.
    Carefully spread the remaining batter over the apple layer. Top with the remaining apples and sprinkle over the rest of the cinnamon sugar. Gently press the apple pieces into the surface so they stay in place while baking.
  • Bake.
    Bake for 55–65 minutes, beginning to check the loaf around the 50-minute mark. Insert a toothpick into the center, avoiding large apple pieces. It should come out clean or with only a few moist crumbs attached. If the top begins browning too quickly, loosely cover the loaf with aluminum foil.
  • Cool.
    Allow the bread to cool in the pan for about 15 minutes. Use the parchment paper to carefully lift it out, then transfer it to a wire rack and allow it to cool completely before glazing.
  • Prepare the vanilla glaze.
    Whisk together the powdered sugar, vanilla extract, and 1 tablespoon of milk. Add additional milk a little at a time until the glaze reaches a thick but pourable consistency.
  • Glaze and serve.
    Drizzle the glaze generously over the cooled apple bread. Allow it to set for about 10–15 minutes before slicing and serving.

Notes

  • Choose firm baking apples. Granny Smith, Honeycrisp, Fuji, Braeburn, or Pink Lady apples work particularly well because they hold their shape during baking instead of becoming overly soft or watery.
  • Dice the apples finely. Aim for pieces around ¼ inch in size. Smaller pieces soften evenly inside the loaf and make it easier to get apple in every slice.
  • Avoid adding excess apple liquid. After tossing the apples with sugar and cinnamon, a little juice may collect at the bottom of the bowl. Leave this liquid behind when assembling the loaf so the center does not become overly wet.
  • Allow the loaf to cool before glazing. Pouring glaze over a warm loaf will cause it to melt and disappear into the surface. Cooling completely creates a thicker, more attractive glaze that stays visible on top.
