  • 1 cup orzo pasta, uncooked
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large deep skillet over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for 3–4 minutes, stirring often, until the onion is translucent and fragrant.
  3. Add the ground beef to the skillet. Cook for 5–7 minutes, breaking it apart with a spatula, until browned and cooked through. Drain excess fat if needed and return the beef to the skillet.
  4. Stir in the diced tomatoes with their juices, beef broth, orzo, Italian seasoning, red pepper flakes (if using), and a pinch of salt and pepper. Mix well to combine.
  5. Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  6. Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
  7. Fold in the chopped spinach and cook uncovered for 2–3 minutes, just until the spinach is wilted.
  8. Remove the skillet from the heat and stir in the grated Parmesan cheese until creamy and well combined.
  9. Let rest for 2–3 minutes to thicken slightly, then garnish with chopped fresh parsley and serve hot.

Notes

  • Use lean ground beef (90% or leaner) if you prefer a lighter skillet meal and to minimize excess grease.
  • If the orzo isn’t tender but the skillet looks dry, add a splash of broth or water, cover, and cook a few minutes longer.
  • For a creamier finish, stir in an extra tablespoon of olive oil or a small knob of butter with the Parmesan.
