  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 (28 oz) can maple cured beans, undrained (or any beans you love!)
  • 3 to 4 medium red potatoes

Instructions

  1. Prepare the Potatoes:
    Boil the potatoes in a large pot of water until fork-tender, about 15–20 minutes. Drain, let cool slightly, then peel and chop or slice into bite-sized pieces. (Red potatoes work great here because they hold their shape beautifully!)
  2. Cook the Ground Beef:
    In a large skillet over medium heat, add the ground beef and chopped onion. Cook for 6–8 minutes until the beef is browned and the onions are soft. Drain off excess grease.
  3. Combine and Simmer:
    Add the baked beans and cooked potatoes to the skillet with the beef and onions. Stir to combine everything well. Cover the skillet and simmer on low heat for about 20 minutes, allowing the flavors to meld together.
  4. Serve:
    Spoon into bowls and serve hot. This stew is rich, comforting, and perfect for cozy nights in. Add a dash of hot sauce or shredded cheddar if you’re feelin’ bold.

Notes

  • For extra flavor, try seasoning the ground beef with a pinch of smoked paprika or a splash of Worcestershire sauce.
  • Want to stretch it further? Add a handful of frozen corn or diced bell pepper with the onions.
