  • 1 cup breadcrumbs (plain or Italian)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons lemon juice (about 1 lemon)
  • Zest of 1 lemon
  • Cooking spray or olive oil, for baking

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or a thin layer of olive oil.
  2. In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper. Stir until evenly mixed.
  3. In a separate bowl, whisk together the eggs, lemon juice, and lemon zest until well combined.
  4. Pat the chicken tenders dry with paper towels. Dip each tender into the egg mixture, letting any excess drip off.
  5. Transfer the coated tender to the breadcrumb mixture, pressing gently on all sides so the coating adheres well. Place on the prepared baking sheet. Repeat with all chicken tenders, spacing them slightly apart.
  6. Lightly spray the tops of the chicken tenders with cooking spray or drizzle with a little olive oil for extra crispiness.
  7. Bake for 15–20 minutes, flipping once halfway through, until the chicken is cooked through (165°F/74°C internal temperature) and the coating is golden brown and crispy.
  8. Remove from the oven and let rest for a few minutes. Serve warm with your favorite dipping sauce or alongside a fresh salad.

Notes

  • For the crispiest results, don’t crowd the baking sheet use two sheets if needed so the tenders can crisp instead of steam.
  • Grate your Parmesan finely so it blends smoothly into the breadcrumb mixture and sticks well to the chicken.
  • If your breadcrumbs are salted, reduce the added salt slightly to keep the tenders from being too salty.
