Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch (23×33 cm) baking dish with nonstick spray or a thin layer of oil.
- In a large mixing bowl, add the shredded cooked chicken, cooked rice, black beans, corn, diced tomatoes with green chilies (with their juices), and chicken broth.
- Sprinkle in the taco seasoning, garlic powder, onion powder, and a generous pinch of salt and black pepper. Stir until everything is evenly combined and the rice is well coated in the seasonings and tomato mixture.
- Transfer the mixture to the prepared baking dish, spreading it out into an even layer so it bakes uniformly.
- Cover the dish tightly with aluminum foil and bake for 25 minutes, until the casserole is heated through and the flavors have melded.
- Carefully remove the foil, then sprinkle the shredded cheddar cheese evenly over the top of the casserole.
