Description
One Pot Tomato Basil Pasta is a vibrant, weeknight-friendly dish that delivers big Italian-inspired flavor with minimal effort and cleanup. Everything cooks together in a single pot pasta, tomatoes, broth, aromatics, and herbs creating a silky, starchy sauce that clings to every strand. Fresh basil and a drizzle of olive oil finish it off for a light, satisfying meal.
Ingredients
Scale
- 12 ounces spaghetti
- 1 can (14.5 ounces) diced tomatoes, with juices
- 4 cups vegetable broth
- 1 medium onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot or deep skillet, combine the spaghetti, diced tomatoes with their juices, vegetable broth, sliced onion, minced garlic, dried oregano, and red pepper flakes, if using.
- Place the pot over medium-high heat and bring the mixture to a boil, using tongs or a spoon to gently separate the pasta as it softens.
- Once boiling, reduce the heat to medium-low. Cover the pot and cook for 10–12 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and most of the liquid has reduced to a sauce-like consistency.
- Remove the pot from the heat. Stir in the chopped fresh basil and olive oil until evenly distributed.
- Taste and season with salt and pepper as needed.
- Serve hot, with grated Parmesan cheese on top if desired.
Notes
- Use a wide pot so the spaghetti can lie mostly flat; it will soften quickly and sink into the liquid as it cooks.
- Check the pasta a minute or two early to avoid overcooking, especially if your stove runs hot.
- If the liquid reduces too quickly before the pasta is tender, add a splash of hot water or broth and continue cooking.
- For a richer finish, stir in a knob of butter or a splash of cream at the end along with the basil.
