Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch (23×33 cm) baking dish with nonstick spray or butter and set aside.

  3. Season the chicken with salt, black pepper, and grated ginger. Stir well so the spices coat the chicken evenly.
  4. Add the chopped onion and minced garlic to the skillet. Sauté for 2–3 minutes, or until the onion softens and turns translucent.
  5. Stir in the bell peppers, broccoli florets, and pineapple chunks. Cook for another 3–4 minutes, just until the vegetables are slightly tender but still vibrant.
  6. In a large mixing bowl, add the cooked rice. Pour in the chicken and vegetable mixture, then add the chicken broth and soy sauce.
  7. Use a spatula to mix everything together until the rice is evenly coated and the ingredients are well distributed.
