Ingredients
Scale
- 1 pound breakfast sausage
- 6 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded cheddar cheese
- 4 cups cubed bread (preferably day-old)
- 1 cup diced bell peppers (any color)
- 1/2 cup chopped green onions
- Butter or nonstick spray, for greasing the baking dish
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray and set aside.
- In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a spatula, until browned and cooked through. Drain off any excess fat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until the mixture is smooth and well combined.
- Add the cooked sausage, shredded cheddar cheese, cubed bread, diced bell peppers, and chopped green onions to the egg mixture. Gently fold everything together until the bread is evenly coated and the ingredients are well distributed.
- Pour the mixture into the prepared 9×13-inch baking dish, spreading it out into an even layer. Lightly press down with a spatula to help the bread soak up the custard.
- Bake in the preheated oven for 30–35 minutes, or until the casserole is set in the center, the edges are lightly golden, and a knife inserted in the middle comes out clean.
- Remove from the oven and let the casserole cool for 5–10 minutes to set further. Slice into squares and serve warm.
Notes
- For best texture, use day-old or slightly dried bread so it soaks up the egg mixture without becoming mushy.
- You can assemble the casserole the night before, cover, refrigerate, and bake in the morning just add a few extra minutes to the bake time if baking from cold.
- Different brands of sausage and cheese vary in saltiness, so taste a small cooked bite of the mixture if you’re unsure and adjust seasoning to your liking.
