- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 lemon, zested and juiced
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Parmesan cheese, grated, for serving (optional)
Instructions
- In a large pot, bring salted water to a boil. Cook the orzo according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes, until fragrant but not browned.
- Add the shrimp to the skillet and season with salt and pepper. Cook for 2–3 minutes per side, or until the shrimp are pink, opaque, and just cooked through.
- Stir in the cherry tomatoes and cook for 2 minutes, until they begin to soften and release their juices.
- Add the cooked orzo and fresh spinach to the skillet. Toss everything together, allowing the spinach to wilt.
- Add the lemon juice and lemon zest, stirring well to coat the pasta and shrimp evenly in the sauce.
- Remove from the heat and stir in the chopped parsley. Taste and adjust seasoning with additional salt and pepper, if needed.
- Serve warm, topped with freshly grated Parmesan cheese if desired.
