  • 3 potatoes, diced (peeling optional)

  • 1 cup beef broth (low-sodium preferred)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed between fingers
  • Salt and black pepper, to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Fresh parsley or thyme, chopped, for garnish (optional)

Instructions

  1. Add the beef stew meat to the slow cooker, spreading it in an even layer.
  2. Top with the sliced carrots, diced potatoes, chopped onion, and minced garlic.
  3. Pour the beef broth and Worcestershire sauce evenly over the meat and vegetables.
  4. Sprinkle the dried thyme, dried rosemary, salt, and black pepper over the top.
  5. Stir gently to combine everything, making sure the meat and vegetables are coated in the seasoned liquid.
  6. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until the beef is very tender and the vegetables are cooked through.
  7. If you prefer a thicker sauce, whisk the cornstarch and water together in a small bowl to create a smooth slurry.
  8. About 30 minutes before serving, stir the slurry into the slow cooker, turn the heat to HIGH (if not already), cover, and cook until the sauce has thickened.
  9. Taste and adjust seasoning with additional salt and pepper if needed.
  10. Ladle the beef tips and vegetables into bowls, spooning some of the rich gravy over each serving.
  11. Garnish with chopped fresh parsley or thyme, if desired, and serve hot.

  • Trim any large pieces of fat from the stew meat before cooking for a cleaner broth and less grease on top.
