- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz / 295 g) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (carrots, peas, corn)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 cups cooked rice or pasta, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Place the chicken breasts in a single layer on the bottom of the slow cooker.
- In a medium bowl, whisk together the cream of chicken soup, chicken broth, chopped onion, minced garlic, dried thyme, paprika, and a good pinch of salt and pepper.
- Pour the soup mixture evenly over the chicken in the slow cooker, making sure the chicken is mostly covered.
- Sprinkle the frozen mixed vegetables over the top, spreading them out in an even layer. Do not stir.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and very tender.
- Once cooked, remove the chicken breasts to a plate and shred them using two forks.
- Return the shredded chicken to the slow cooker and stir well so the meat, vegetables, and creamy sauce are fully combined. Taste and adjust seasoning with more salt and pepper if needed.
- Serve the creamy chicken casserole over warm cooked rice or pasta and garnish with fresh chopped parsley.
Notes
- For a thicker, richer sauce, reduce the chicken broth slightly or let the casserole sit uncovered on WARM for 10–15 minutes after cooking.
- If your slow cooker runs hot, check for doneness on the earlier side to avoid drying out the chicken.
