  • 1 cup sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Place the halved baby potatoes in an even layer in the bottom of the slow cooker.
  2. Season the chicken breasts on both sides with salt and pepper, then arrange them on top of the potatoes.
  3. In a medium bowl, whisk together the ranch seasoning mix, cream of chicken soup, and chicken broth until smooth and well combined.

  7. Stir the sour cream and shredded cheddar cheese into the sauce left in the slow cooker until melted, smooth, and creamy.
  8. Return the chicken and potatoes to the slow cooker, gently tossing or spooning the creamy ranch sauce over the top to coat everything well.
  9. Taste and adjust seasoning with additional salt and pepper, if needed.
  10. Sprinkle with freshly chopped parsley just before serving and serve warm.
