  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies (such as Rotel)
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup chicken broth (low sodium preferred)
  • 1/2 cup red onion, chopped
  • 1/2 cup bell pepper, chopped (any color)
  • 1/4 cup fresh cilantro, chopped
  • Salt and freshly ground black pepper, to taste
  • Lime wedges, for serving

Instructions

  1. Place the chicken breasts in an even layer on the bottom of the slow cooker.
  2. In a medium bowl, combine the black beans, corn, diced tomatoes with green chilies, taco seasoning, chicken broth, red onion, and bell pepper. Stir until everything is evenly coated with seasoning.
  3. Pour the bean and corn mixture over the chicken in the slow cooker, making sure the chicken is fully covered with liquid and vegetables.
  4. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the chicken is cooked through and very tender (internal temperature should reach 165°F / 74°C).
  5. Using two forks, shred the chicken directly in the slow cooker, then stir it back into the sauce so it soaks up all the juices and flavors.
  6. Taste and season with salt and pepper as needed. Stir in the chopped fresh cilantro just before serving for a burst of freshness.
  7. Serve hot with lime wedges on the side for squeezing over each portion just before eating.

Notes

  • Use low-sodium broth, beans, and taco seasoning if you want more control over the salt level.
  • If the mixture seems too soupy at the end of cooking, remove the lid and cook on HIGH for 15–20 minutes to reduce slightly.
