  • 2 cups kale or spinach, chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a slow cooker, combine the vegetable broth, carrots, celery, onion, garlic, diced tomatoes (with their juices), green beans, corn, thyme, basil, salt, and pepper.
  2. Stir everything together until the vegetables and seasonings are evenly distributed in the broth.
  3. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the vegetables are very tender and flavorful.
  4. About 30 minutes before serving, stir in the chopped kale or spinach and the lemon juice.
  5. Cover and continue cooking for the remaining 30 minutes, just until the greens are wilted and tender.
  6. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed before serving.

Notes

  • Use a low-sodium vegetable broth if you prefer more control over the salt level.
  • Frozen vegetables can replace fresh ones in equal amounts; no need to thaw first.
  • The soup thickens as it sits. Add extra broth or water when reheating if you prefer a looser consistency.
