- 1 teaspoon dried thyme
- 1 bay leaf

- 2 cups kale or spinach, chopped (optional)
- 1 tablespoon lemon juice (optional)
Instructions
- Rinse the lentils under cold water, picking out any debris or damaged lentils. Drain well.
- Add the lentils, chopped onion, diced carrots, diced celery, minced garlic, diced tomatoes with their juice, vegetable broth, ground cumin, dried thyme, bay leaf, salt, and pepper to the crockpot.
- Stir everything together until the ingredients are evenly combined.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the lentils and vegetables are very tender.
- If using kale or spinach, stir it into the soup during the last 30 minutes of cooking, allowing it to wilt and soften.
- Once the lentils are tender, remove and discard the bay leaf. Stir in the lemon juice, if using, for a bright, fresh finish.
- Taste and adjust seasoning with additional salt and pepper as needed. Ladle into bowls and serve warm.
Notes
- Green or brown lentils work best here because they hold their shape well during long, slow cooking.
- For a thicker, creamier texture, lightly mash some of the lentils in the crockpot with a spoon or potato masher before serving.
- The salt level will depend heavily on your vegetable broth; start with less and adjust at the end if needed.
- If your slow cooker runs hot, start checking the lentils a bit earlier to avoid overcooking them into complete mush (unless you like it very thick).
