Ingredients
Scale
- 4 large flour tortillas
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1/3 cup red bell pepper, finely diced
- 1/3 cup green bell pepper, finely diced
- 1/3 cup cherry tomatoes, finely diced
- 1/4 cup red onion, finely diced
- 2 tablespoons chopped cilantro or parsley
- 1 tablespoon lime juice
Instructions
- Make the creamy base:
In a large bowl, mix softened cream cheese, sour cream, shredded cheddar cheese, ranch seasoning, garlic powder, and black pepper until smooth and creamy. - Add the cowboy caviar mix:
Stir in the black beans, corn, red bell pepper, green bell pepper, cherry tomatoes, red onion, cilantro or parsley, and lime juice. - Mix gently:
Fold everything together until evenly combined. Try not to mash the beans so the filling stays colorful and chunky. - Spread onto tortillas:
Lay the tortillas flat on a clean surface. Spread the filling evenly over each tortilla, leaving a small border around the edges. - Roll tightly:
Roll each tortilla up tightly into a log. A tight roll helps the pinwheels hold their shape when sliced. - Chill:
Wrap each tortilla roll in plastic wrap and refrigerate for at least 1 hour so the filling firms up and slices neatly. - Slice and serve:
Remove the plastic wrap and slice each roll into 1-inch pinwheels. Arrange on a serving platter and serve chilled.
Notes
- This is a no-cook recipe, which makes it perfect when you need a quick appetizer that can be prepared ahead of time.
- Drain the beans, corn, and tomatoes very well before adding them to the filling. Too much liquid can make the tortilla roll-ups soft or watery.
- Use softened cream cheese so the filling mixes smoothly and spreads easily over the tortillas.
- Chilling is important. It helps the filling firm up, keeps the tortillas tight, and makes the pinwheels much easier to slice cleanly.
