- 1 pound of ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of corn (fresh or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar or preferred)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground turkey for 5–7 minutes, breaking it apart until browned. Drain any excess fat.
- Add the chopped onion and minced garlic, cooking 3–4 minutes until the onion softens.
- Add the sweet potatoes, corn, black beans, cumin, paprika, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes begin to soften.
- Transfer the mixture into a greased 9×13-inch baking dish, spreading evenly. Top with shredded cheese.
- Bake for 25–30 minutes until the sweet potatoes are tender and the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and garnish with fresh cilantro before serving.
Notes
- Swap cheddar for pepper jack if you want a little heat.
- Add diced tomatoes or green chilies for extra flavor.
- Make it dairy-free by using your favorite plant-based cheese.
