  • 3 cups cooked chicken, shredded or chopped
  • 1 package (6 oz) savory herb stuffing mix
  • 1 can (10 oz) cream of chicken soup
  • ½ cup sour cream
  • 1 cup chicken broth
  • 3 tablespoons unsalted butter, melted
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Onion powder, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease an 11 × 7-inch baking dish and set it aside.
  2. In a large mixing bowl, combine the cooked chicken, stuffing mix, cream of chicken soup, sour cream, and chicken broth.
  3. Pour in the melted butter. Season with salt, black pepper, garlic powder, and onion powder to taste.
  4. Stir until the chicken and stuffing are evenly coated and the creamy mixture is thoroughly combined.
  5. Transfer the mixture to the prepared baking dish, spreading it into an even layer.
  6. Cover the dish tightly with aluminum foil and bake for approximately 25 minutes.
  7. Carefully remove the foil and bake uncovered for another 10–15 minutes, or until the casserole is hot throughout and lightly golden on top.
  8. Remove it from the oven and let it rest for 5 minutes before serving warm.

Notes

  1. The amount of broth needed may vary slightly depending on the stuffing mix. The filling should be moist and creamy but not soupy.
  2. Rotisserie chicken works especially well and makes preparation quick. Remove the skin and bones before shredding the meat.
  3. Taste the chicken and soup mixture before adding extra salt, as canned soup, broth, and stuffing mix can already contain plenty of sodium.
  4. Allowing the casserole to rest for about 5 minutes after baking helps the creamy filling settle, making it easier to portion and serve.
